How to make Budget Efo Riro!

I once told a married colleague I could make a nice pot of ponmo & shaki hugging vegetable soup with just N1500 and he went ballistic. Saying what can possibly be in that vegetable? Well, maybe not everything you would expect but that N1500 will buy me enough ingredient to make a yummy pot of soup.

So if you  are low on cash and just feel like having that home-cooked vegetable soup aka Efo Riro, don’t worry your pretty little head. Here’s my list of ingredient and the prices (based on Ipodo Market Ikeja prices) – You might even find some of these ingredients cheaper depending on where you are shopping. Also ensure your bargaining skills is on point.

Ketu market I hear is very cheap.

Ingredients:

Ugwu leaves – N200

Water leaf – N100

Pepper [Scotch Bonet or Ata Rodo}: N200

Onions: N100

Iru [Locust Beans]: N50

Smoked Catfish preferably: N200

Beef & Shaki :  N500

Ponmo: N150

Other ingredients you probably already have at home: Palm Oil, Salt & Maggi & blended cray fish.

Preparation: Chop pepper and onion. Combine in a blender and pulse to a rough coarse consistency.

If using fresh ugwu and water leaf, place the ugwu in a bowl, add ½ teaspoon of salt, cover with boiling water and place a lid over the bowl. Allow to rest for 15-20mins. Rinse out the spinach and squeeze out all excess water. [Do not place the water leaf in water, use it directly]

Place a large pot over medium heat, add in the palm oil. Heat oil until a little smoky.

Add in the sliced onions and fry until lightly browned. Add in the iru and the blended pepper. Cover and leave to simmer for 10-15 minutes (The palm oil will float to the top when the sauce is ready).

Add in the vegetables, combine. Taste and adjust for seasoning, leave to simmer for another 3- 5 more minutes. Bon Apetite!
