Healthy Stir Fried Chicken and Brown Rice

Basically, I have a problem with digesting food on time, so I was told to increase my fibre intake. Brown rice has been know to have more fibre than white rice but eating it plain like normal rice and stew can be boring, so I decided to make “Stir Fry Brown Rice”.

This is just such a wonderful meal and I really think the brown rice makes it even better. You can, of course, modify it anyhow you want, add your favourite veggies, double the ingredients that you like most, and adjust the seasoning to suit your taste.

So, dust off your wok, get your cutleries out cause this is really GOOD!

INGREDIENTS

2 Cups raw brown rice
1/4 Cup onion, diced
2 Garlic cloves, minced
1 Raw Chicken Breast, Cubed
2 t/spoon soy sauce
Ground ginger
Chopped Veggies – Carrot, Green Pepper, Yellow pepper.
Sweet Corn & Green Peas
Vegetable/Soy oil
2 eggs, beaten

PREPARATION

Boil your Brown Rice.

Cut your veggies.

Beat your eggs together.

Then place some oil in a large wok, let it heat up a bit, then put your onions, and other vegetables, stir fry over medium heat. Cook for 2/3 minutes the add your egg.

Once eggs are cooked, mix chicken and Rice…
